    Soak or cook noodles

    Place sweet potato noodles in a large bowl and cover with warm water. Soak 20–30 minutes until pliable but still slightly firm. Alternatively, bring a large pot of water to a boil and cook noodles 6–7 minutes until translucent and tender but slightly chewy. Drain and rinse under cold water. Cut noodles with kitchen shears 2–3 times to shorten by about half (easier to eat).

    Toss drained noodles with 1 tablespoon of sesame oil to prevent sticking and set aside.

    Prepare vegetables

    Peel and julienne the carrot into matchsticks (about 1 cup). Core and thinly slice the bell pepper into thin strips (about 1/2 cup). Clean mushrooms and slice thinly (about 1 cup). Peel and thinly slice the yellow onion (about 1/2 cup). Trim green onions and cut into 2-inch lengths on the diagonal. Rinse spinach thoroughly and drain.

    Cook spinach

    Bring a small pot of water to a boil. Blanch spinach 20–30 seconds until wilted. Immediately transfer to cold water, squeeze out excess water, and season lightly with a pinch of salt and 1/2 teaspoon sesame oil. Set aside.

    Stir-fry vegetables

    Heat 1 tablespoon vegetable oil in a large nonstick skillet or wok over medium-high heat. Add carrots and stir-fry 1–2 minutes until slightly softened; remove to a plate. Add another 1/2 tablespoon oil if needed and stir-fry bell pepper 1–2 minutes; remove. Add mushrooms and a pinch of salt, cook 2–3 minutes until tender and browned; remove. Finally, add onion and stir-fry 1–2 minutes until translucent; remove. Keep all vegetables separate on the plate (this preserves color and texture).

    Prepare and cook beef

    If using beef: slice thinly against the grain. Marinate briefly with 1 tablespoon soy sauce, 1 teaspoon sugar, and 1 teaspoon minced garlic for 10 minutes. Heat 1/2 tablespoon vegetable oil in the skillet over medium-high heat and stir-fry beef quickly 1–2 minutes until browned and just cooked through. Remove and set aside.

    Make sauce

    In a small bowl combine 4 tablespoons soy sauce, 2 tablespoons sugar, 1 tablespoon sesame oil, 1 teaspoon minced garlic, and 1/2 teaspoon black pepper. Stir until sugar dissolves. Reserve 1 tablespoon soy sauce and 1 tablespoon sesame oil for adjusting final seasoning if needed.

    Combine everything

    Heat the large skillet or wok over medium heat and add the prepared noodles. Pour the sauce over the noodles and toss well for 1–2 minutes to heat through, allowing noodles to absorb the sauce. Add the cooked vegetables (carrots, bell pepper, mushrooms, onions), blanched spinach, and cooked beef (if using). Toss gently but thoroughly for 1–2 minutes until evenly combined and heated. If mixture seems dry, add reserved soy sauce or 1–2 teaspoons water. Taste and adjust seasoning: more soy sauce for salt, 1 teaspoon sugar if you want sweeter, or 1 teaspoon sesame oil for nuttiness.

Finishing

    Turn off heat and drizzle remaining 1 teaspoon sesame oil over japchae. Sprinkle with 1 tablespoon toasted sesame seeds and toss lightly. Garnish with green onion pieces. Serve warm or at room temperature.
