Trim and inspect
Pat the hanging tender dry with paper towels. Trim away any silver skin, excess sinew, or large fat deposits, leaving the main muscle intact. Hanging tender is often sold as a single piece; keep any two pieces together if they are connected.

Tender orientation
Identify the grain of the meat (muscle fibers). Note the long direction of the fibers so you can slice across the grain after cooking for maximum tenderness.
Marinade

Make marinade
In a shallow dish or resealable bag, combine olive oil, soy sauce, Worcestershire sauce, red wine vinegar, minced garlic, chopped thyme, and 1 tsp freshly ground black pepper. Whisk or shake to emulsify.

Marinate the steak
Place the trimmed hanging tender into the marinade, turning to coat thoroughly. Cover and refrigerate for 30 minutes to 2 hours. (Short marinate preserves the pure beef flavor and texture; do not exceed 4 hours for this lean cut.) Remove from fridge 30 minutes before cooking to come toward room temperature.

Preheat and season
About 10 minutes before cooking, preheat a heavy skillet (cast iron preferred) over high heat until smoking hot, or prepare a hot grill over direct high heat. Pat the steak dry with paper towels, then lightly brush off excess marinade. Rub both sides with the coarse kosher salt (about 1 tbs total) and the remaining 1 tsp freshly ground black pepper.

Sear the steak
Add 1 tsp of olive oil to the skillet (if using a skillet) and immediately place the steak in the pan or on the grill. Sear undisturbed for 2.5–3 minutes per side for medium-rare (internal temp ~125–130°F / 52–54°C), or 3.5–4 minutes per side for medium (135°F / 57°C). Adjust time for thickness; hanging tender is usually 1–1.5 inches thick. Also sear the edges for 30–45 seconds if desired.

Butter baste (optional)
In the last 30–45 seconds of cooking in the skillet, add 1 tablespoon unsalted butter and spoon the melted butter over the steak continuously to enhance flavor and surface sheen. If grilling, remove to a cooler part of the grill and brush with butter.

Rest
Transfer the steak to a cutting board and tent loosely with foil. Let rest for 8–10 minutes to allow juices to redistribute.

Slice across the grain
Locate the grain direction noted earlier and slice the steak thinly across the grain into 1/4-inch thick slices. Thin slices maximize tenderness and highlight the deep beefy flavor.

Garnish and serve
Arrange slices on a warm platter, sprinkle with chopped fresh parsley, and offer lemon wedges at the side to brighten the flavor. Serve immediately with your choice of sides (potatoes, salad, grilled vegetables).
