    Prepare cheese and bread

    Grate the cheddar and Gruyère and combine in a small bowl so the cheeses blend evenly. If using Dijon, spread it thinly on the inside surface of one bread slice. If using mayonnaise for extra crisp, spread it on the outer side(s) of the bread instead of butter.

    Assemble sandwich

    Place one bread slice, inside side up, and pile the mixed cheeses evenly across the center, leaving about 1/2 inch clear at the edges. Add any optional add-ins (tomato slice, cooked bacon, caramelized onion) on top of the cheese. Top with the second bread slice, inside side down.

    Butter exterior

    If you did not use mayonnaise, spread about 1 tablespoon unsalted butter evenly over the outer face of each bread slice. If using mayonnaise on the exterior, you can use just 1 tablespoon butter or none.

    Heat a heavy skillet or cast-iron pan over medium-low to medium heat for 2 minutes. Place the sandwich in the pan and press down gently with a spatula. Cook for 3–4 minutes until the bottom is golden brown and the cheese begins to melt. Carefully flip the sandwich and reduce heat to medium-low if the bread is browning too quickly. Cook the second side 3–4 minutes, pressing occasionally, until the cheese is fully melted and both sides are evenly golden.

    Alternative: Oven method (for even melting)

    Preheat oven to 375°F (190°C). Butter or mayo the outside of the sandwich, place on a baking sheet, and bake for 6 minutes. Flip and bake another 4–6 minutes until golden and cheese is melted. For an extra-crispy exterior, finish 1–2 minutes under the broiler—watch closely to avoid burning.

    Rest and slice

    Remove the sandwich from the pan or oven and let rest 1 minute to let the cheese settle. Slice diagonally with a sharp knife for cleaner slices.

    Sprinkle the sliced sandwich lightly with freshly ground black pepper (about 1/8 tsp) and serve immediately. Serve with pickles, tomato soup, or your preferred dipping sauce.
