Base & Mixer

Method

Prepare the Grape Purée

  1. 1

    Blend grapes

Place 6 of the seedless green grapes into a blender. Add the grape juice (3 oz) and simple syrup (0.5 tbs). Pulse or blend on low for 10–15 seconds until you have a smooth, slightly pulpy grape purée. If you prefer a clearer drink, strain the purée through a fine mesh sieve into a bowl, pressing to extract as much liquid as possible. Reserve the strained purée (about 2.5–3 oz).

Mix the Cocktail

  1. 2

    Combine base ingredients

In a cocktail shaker (or a large jar with a lid), add the strained grape purée (or unstrained blended mixture), 6 oz Chamisul soju, and 0.5 tbs fresh lime juice. Add a handful of ice (about 1/2 cup) to the shaker to chill and slightly dilute the mixture.

  2. 3

    Shake

Secure the shaker lid and shake vigorously for 8–10 seconds until well chilled (if using a jar, shake vigorously until the outside is cold). The shaking will integrate the grape purée with the soju and lime.

Assemble & Serve

  1. 4

    Prepare the glass

Fill a large Collins glass or a double old-fashioned glass with crushed ice or ice cubes (about 3/4 full). Add the remaining 2 green grapes (lightly muddled) into the glass if you like extra fruit texture.

  2. 5

    Strain and top

Strain the chilled soju–grape mixture from the shaker into the prepared glass over the ice. Top gently with 2 oz sparkling water to add effervescence. Stir once gently with a bar spoon to combine.

  3. 6

    Garnish and finish

Thread 2–3 halved green grapes onto a cocktail pick and rest it on the rim, or float them on top. Add a mint sprig if desired. Taste and adjust sweetness: add up to 1/2 tsp simple syrup if you prefer sweeter, or a few drops more lime juice to brighten.
