    Prepare brisket

    If not already very thin, partially freeze the brisket for 30–45 minutes until firm but not frozen solid. Using a sharp knife, slice the brisket against the grain into very thin slices (2–3 mm). Aim for uniform thickness so cooking is even.

    Lay the slices in a single layer on a tray or plate and pat lightly with paper towels to remove excess moisture. This helps the salt and garlic adhere and prevents steaming during cooking.

    Season both sides of the brisket slices evenly with the kosher salt and freshly ground black pepper. Use about 1/4 tsp salt per 4 oz of meat (the recipe total salt amount is intended for 1.5 lbs). Let rest at room temperature for 10 minutes to allow the salt to start extracting moisture and flavor.

Garlic Seasoning

    Make garlic mixture

    In a small bowl combine the minced garlic, neutral oil, soy sauce (if using) and rice vinegar or lemon juice. Stir to make a loose paste. The oil carries garlic flavor and helps it brown; the soy and acid add depth.

    Heat a heavy skillet (cast iron or stainless steel) over medium-high heat until hot. Add the garlic-oil mixture and cook, stirring constantly, for 30–45 seconds just until fragrant and the garlic begins to sizzle. Do not let it burn — remove from heat briefly if it starts to brown too dark.

Cooking & Finishing

    Sear brisket slices

    Return the skillet to medium-high heat. Add the brisket slices in a single layer — do not overcrowd. Sear for 20–40 seconds per side, flipping once, until edges color and slices are just cooked through (thin slices cook very quickly). Work in batches if needed and wipe the pan between batches if residue builds up.

    As each batch finishes, transfer slices to a warm serving plate and immediately brush or spoon a small amount of the reserved garlic-oil from the skillet over the meat to keep it glossy and garlicky.

    When all batches are cooked, sprinkle the toasted sesame oil lightly over the assembled brisket, scatter sliced green onions and sesame seeds on top, and offer lemon wedges at the side to squeeze just before eating if desired.
