    Sweat the aromatics

    In a large heavy-bottomed pot, melt the butter over medium heat. Add the diced onion, carrot and celery. Cook, stirring occasionally, until onion is translucent and vegetables are softened, about 6–8 minutes.

    Add garlic and flour

    Add the minced garlic and cook for 30 seconds until fragrant. Sprinkle the flour over the vegetables and stir continuously for 1–2 minutes to cook the raw flour taste and form a light roux.

    Deglaze and add stock

    Slowly whisk in 1 cup of the stock to deglaze the pan, scraping up any browned bits. Then whisk in the remaining stock until smooth. Increase heat to bring the mixture to a gentle simmer.

    Add dairy

    Stir in the milk or cream. Keep the soup at a gentle simmer (not a rolling boil) to prevent dairy from curdling.

Vegetables & Protein (customizable)

    Cook firmer vegetables

    Add the diced potato and mushrooms to the simmering soup along with the bay leaf and thyme sprigs. Simmer, uncovered, until the potatoes are tender when pierced with a fork, about 12–15 minutes.

    Add quick-cooking items and protein

    Stir in the frozen peas and the cooked shredded chicken or drained canned white beans. Heat gently until warmed through, about 3–5 minutes. If using beans, stir gently to avoid breaking them apart too much.

Herbs, Seasoning & Finish

    Season and finish

    Remove and discard the bay leaf and thyme stems. Stir in the chopped parsley, salt, pepper and lemon juice (if using). Taste and adjust seasoning as needed.

    Ladle the soup into bowls and serve with slices of crusty bread. Makes about 4 generous servings.
