Ice Cream Base
Optional Serving / Add-ins
Method
Ice Cream Base
- 1
Combine liquids and sugar
In a medium saucepan, combine 1 cup whole milk and 1 cup heavy cream. Add 1 cup granulated sugar and a pinch of fine sea salt. Warm gently over medium-low heat, stirring frequently, until the sugar is fully dissolved and the mixture is warm but not boiling (about 4–6 minutes).
- 2
Add vanilla
Remove the saucepan from heat and stir in 2 teaspoons vanilla extract. Taste and adjust salt or vanilla if desired.
- 3
Chill base
Pour the mixture into a bowl or measuring cup, cover with plastic wrap (press the wrap directly onto the surface to prevent a skin), and refrigerate until thoroughly chilled, at least 2 hours or up to overnight. Chilling is important for a smooth texture.
- 4
Churn
Once the base is cold, pour it into an ice cream maker and churn according to the manufacturer's instructions, usually 20–25 minutes, until it reaches a soft-serve consistency.
- 5
Add optional mix-ins
If using chocolate shavings or chips (1/4 cup) or fresh berries (1/2 cup), add them in the last 2–3 minutes of churning so they distribute evenly without breaking down.

Scoop 1/2 to 3/4 cup portions (serving size below) into bowls or cones. Garnish with fresh berries and mint leaves if desired. Let the ice cream sit at room temperature for 2–3 minutes before scooping if it's very hard.
