    Activate yeast and combine wet ingredients

    In a large bowl, stir the warm water (about 105–115°F / 40–46°C) with the sugar and instant yeast. Let sit 5–7 minutes until foamy. Stir in olive oil.

    Add the flour and salt to the yeast mixture. Stir with a wooden spoon or dough hook until a shaggy dough forms.

    Turn dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic (or knead 5–7 minutes in a stand mixer with dough hook). Add small dustings of flour only as needed to prevent sticking.

    First rise

    Lightly oil a large bowl, place the dough inside, cover with plastic wrap or a damp towel. Let rise in a warm draft-free place until doubled in size, about 1 to 1.5 hours.

    Divide and rest

    Punch down the dough and divide it into two equal portions for two 12-inch pizzas. Shape into tight balls, cover, and let rest 20 minutes to relax the gluten.

    Stretch the crusts

    On a lightly floured surface, press and stretch each dough ball into a 12-inch round, leaving a slightly thicker rim for the crust. Transfer to a pizza peel or parchment-lined baking sheet. Brush the outer rim lightly with the reserved 1 tbs olive oil.

    Cook sauce

    In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add minced garlic and cook 30 seconds until fragrant. Stir in crushed tomatoes and tomato paste. Add dried oregano, dried basil, sugar, salt, and black pepper. Simmer gently for 10–12 minutes to meld flavors, stirring occasionally. Taste and adjust seasoning.

    Remove from heat and let sauce cool slightly before spreading on the dough to avoid soggy crust.

    Preheat oven

    Place a pizza stone or heavy baking sheet on the middle rack and preheat oven to 500°F (260°C) for at least 30 minutes. If using a home oven that reaches 500°F, this gives the best crust. For ovens limited to 475°F, preheat as hot as possible.

    Spread about 3/4 cup of sauce evenly over each stretched dough, leaving the rim exposed. Sprinkle 2 cups of shredded mozzarella on each pizza, distributing evenly. Arrange pepperoni slices across the cheese. Finish with a light dusting of grated parmesan and a sprinkle of dried oregano.

    Slide pizzas onto the preheated stone or baking sheet. Bake one at a time for 8–10 minutes, rotating halfway through, until crust is golden and cheese is bubbly and beginning to brown. Baking time may vary by oven; watch closely.
