Warm liquids and activate yeast
Combine the warm water and warm milk in a measuring cup or small bowl; temperature should be about 100–110°F (37–43°C) — comfortably warm but not hot. Stir in 1 teaspoon of the granulated sugar (from the 1 tablespoon) and sprinkle the instant yeast over the top. Let sit 5–8 minutes until foamy. If it doesn’t foam, the yeast may be inactive; start again with fresh yeast.

Mix dry ingredients
In the bowl of a stand mixer fitted with the dough hook (or a large mixing bowl if mixing by hand), whisk together the all-purpose flour, remaining granulated sugar (about 2 teaspoons of the tablespoon), and fine salt until evenly distributed.

Combine wet and dry
Add the foamy milk-water-yeast mixture to the flour along with the eggs, melted butter (cooled slightly), and 1 teaspoon vegetable oil. With the mixer on low, mix until the dough comes together, then increase speed to medium-low and knead 4–6 minutes until smooth, slightly tacky, and elastic. If mixing by hand, stir with a wooden spoon to form a shaggy dough, then turn onto a lightly floured surface and knead 8–10 minutes.

First rise
Lightly oil a clean bowl and place the dough in it, turning once so the surface is lightly coated in oil. Cover tightly with plastic wrap or a damp kitchen towel and let rise in a warm draft-free place until doubled in size, about 1 to 1¼ hours depending on room temperature.

Chill the dough
After the dough has doubled, gently deflate it and fold it into a rough rectangle. Cover and refrigerate for at least 2 hours and up to overnight. Chilling relaxes the gluten and makes the dough easier to stretch thinly for classic beignet shape.

Prepare frying oil
Pour 4–6 cups of frying oil into a heavy-bottomed deep pot or Dutch oven to a depth of about 2–3 inches. Attach a thermometer and heat oil to 360°F (182°C). Maintain 350–365°F during frying — adjust burner as needed. If you don’t have a thermometer, test with a small piece of dough: it should sizzle and rise to the surface quickly without browning immediately.

Roll and cut dough
Turn chilled dough onto a lightly floured surface and roll or stretch to a rectangle about 1/4-inch (6 mm) thick. Using a pizza cutter or sharp knife, cut into 2½- to 3-inch squares (or traditional rectangles). For a filled or puffier beignet, cut slightly larger. Dust liberally with flour as needed to prevent sticking, but don’t incorporate too much extra flour.

Fry beignets
Working in small batches (4–6 pieces depending on pot size), gently slide beignets into the hot oil, a few inches apart. They will sink briefly then puff and float; fry 1½–2 minutes per side until puffed and golden brown (total 3–4 minutes). Use a slotted spoon or spider to turn them once halfway through. Monitor oil temperature and adjust heat so the outside browns evenly without burning before the center cooks.

Drain
Transfer fried beignets to a paper towel–lined baking sheet or wire rack placed over a sheet pan to drain briefly. Let rest 1–2 minutes — they continue to cook internally.

Powder sugar finish
While still warm (but not piping hot), transfer beignets to a large sieve or place on a tray and generously dust with confectioners' sugar. For extra flavor, sift in the optional ground cinnamon with the powdered sugar before dusting. If you prefer a slightly savory contrast, finish with a tiny pinch of coarse sea salt on each serving instead of cinnamon.

Serve beignets immediately — ideal warm within 15 minutes of frying — alongside cafe au lait or a chocolate dipping sauce if desired. Beignets are best the day they are made; leftover pieces can be refreshed in a 350°F (175°C) oven for 5–7 minutes to regain crispness.
