Fermentation Process

Prepare the Base

In a large pot, combine 3 cups of water and 0.5 cups of sugar. Heat over medium heat until sugar is completely dissolved.

Add Yeast

Once the sugar has dissolved, remove the pot from heat. Let the mixture cool to room temperature, then add 1 tsp of yeast. Stir gently to combine.

Ferment

Cover the pot with a clean cloth and let it sit at room temperature for 24 to 48 hours, or until bubbles start forming, indicating fermentation.

Add Flavor Ingredients

Once fermentation is evident, add 1 cup of pineapple juice, 0.5 cup of mango puree, and 2 tbs of lime juice to the mixture. Stir well to combine.

Bottle the Mixture

Carefully transfer the mixture to clean bottles, leaving some space at the top. Add 1 cup of seltzer water to each bottle before sealing.

Seal and Chill

Seal the bottles tightly and refrigerate for at least 2 days to allow the flavors to meld and carbonate.

If desired, prepare garnishes by cutting fresh pineapple into chunks and washing fresh mint leaves.
