1. Harvest the Grapes

Select fully ripe Sauvignon Blanc grapes from the vineyard. Remove any stems and leaves, then wash the grapes gently to remove any impurities.

2. Crush the Grapes

Using a grape crusher or your hands, crush the grapes to extract the juice. Ensure to collect all the juice in a sanitized fermentation container.

3. Add Water and Sugar

Pour the filtered water into the fermentation container with the grape juice. Add the sugar and stir until fully dissolved.

4. Prepare Yeast

In a small bowl, activate the yeast by mixing it with a few tablespoons of the grape juice. Let it sit for about 10 minutes until frothy.

5. Combine Ingredients

Add the activated yeast to the fermentation container. Also, add the acid blend and crushed Campden tablet to the mixture. Stir gently to combine.

6. Fermentation

Cover the fermentation container with a clean cloth and secure it. Allow the mixture to ferment in a dark, cool place for about 1-2 weeks, stirring daily.

7. Rack the Wine

Once fermentation is complete, siphon the wine off the sediment into a clean carboy or secondary fermentation vessel, leaving the sediment behind.

8. Aging

Seal the carboy with an airlock and let the wine age for at least 1-3 months to develop its flavors. Check the taste periodically.

9. Bottling

Once the wine has aged to your satisfaction, siphon it into sanitized bottles, leaving some space at the top. Cork the bottles securely.

10. Serve

Chill the bottled Sauvignon Blanc in the refrigerator for a few hours before serving. Enjoy it chilled with seafood, salads, or light pasta dishes.
