In a large mash tun, heat 3 liters of filtered water to approximately 70°C (158°F). Add the Pale Malt, Caramel/Crystal Malt, and German Pilsner Malt. Stir well to ensure all grains are saturated.

Allow the mash to rest at 65°C (149°F) for 60 minutes to convert starches to sugars.

After the mash rest, sparge the grains with an additional 2 liters of hot water to extract the sugars.

Sparging

Bring the collected wort to a boil and add Hallertau Hops. Boil for 60 minutes.

Cool the wort quickly using a wort chiller or an ice bath until it reaches approximately 20°C (68°F).

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Belgian Sour Ale Yeast and seal with an airlock.

Allow the beer to ferment at room temperature for 1-2 weeks until fermentation activity subsides.

First Fermentation

After fermentation, add the pitted sour cherries to the beer and allow it to condition for an additional 1-3 weeks.

Once conditioning is complete, prepare to bottle the beer by sanitizing bottles and caps.

Prepare for Bottling

Transfer the beer into the sanitized bottles, leaving some headspace, and cap the bottles.

Bottle the Beer

Allow the bottles to carbonate at room temperature for another 1-2 weeks.
