Prepare the Ingredients

Rinse the turkey necks under cold water and pat dry. Chop the onion and mince the garlic.

Sear the Turkey Necks

In a large pot, heat the olive oil over medium heat. Add the turkey necks and sear them until browned on all sides, about 5-7 minutes.

Add Vegetables and Seasoning

Add the chopped onion, minced garlic, bay leaves, salt, black pepper, and thyme to the pot. Stir to combine.

Add Water and Simmer

Pour in the water and bring to a boil. Reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the turkey necks are tender.

Serve

Remove the turkey necks from the pot and serve them warm. You can also strain the broth for a delicious soup base.
