1. Prepare the meat
If your steak is not pre-sliced, freeze the roast for 30–45 minutes until firm but not rock hard, then slice as thinly as possible against the grain. Place 1 lb thinly sliced steak in a bowl and season evenly with 1 tsp sea salt, 1 tsp freshly ground black pepper, 1 tsp garlic powder and 1/2 tsp onion powder (if using). Toss to coat and let sit at room temperature for 10 minutes while you heat the pan.

2. Sweat the onion (optional)
Heat a large heavy skillet or griddle over medium-high heat until very hot (about 2–3 minutes). Add 1 tablespoon neutral oil and 1 tablespoon unsalted butter. When the butter foams, add 1/2 cup thinly sliced yellow onion. Cook, stirring occasionally, until softened and lightly browned, about 4–6 minutes. Push the onions to one side of the pan.
3. Cook the steak
Add the seasoned thinly sliced steak to the hot skillet in a thin, even layer. Let it sear undisturbed for 20–30 seconds to develop a brown edge, then use a spatula or two to press and move the meat, breaking up any large clumps. Cook for another 1–2 minutes, stirring and flipping so the meat cooks quickly but does not steam. Total cook time for the thin slices should be 2–3 minutes until just cooked through with some browned edges. If the pan gets crowded, work in two batches to maintain high heat.

4. Optional melt and assemble
If using cheese, move the cooked steak and onions to one side of the pan or transfer briefly to the split rolls. Top meat with 2 slices provolone or American cheese (one per roll portion) and cover the pan with a lid for 30–45 seconds, or until cheese melts. Alternatively, place cheese on the rolls and spoon hot meat on top to melt.
