Method
Prepare Bread & Spreads
On the non-buttered side of one slice, spread 1 tablespoon mayonnaise evenly. On the other slice, spread 1 teaspoon Dijon mustard (or adjust to taste). If using optional hot sauce or pesto, add it sparingly on top of the mayo side.
Assemble Sandwich
Layer turkey and cheese
Place 4 slices of turkey on the mayo-spread slice of bread, slightly overlapping. If using cheese, place 1 cheese slice on top of the turkey. Add the remaining 4 slices of turkey on top of the cheese for extra turkey thickness (total 8 slices).
Add fresh produce
Top the turkey with 2 leaves of lettuce, 4 tomato slices evenly arranged, 4 red onion rings, and 4 pickle slices.
Lightly sprinkle 1/8 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper over the tomato slices to enhance flavor.
Finish & Serve
If desired, press the assembled sandwich in the skillet over low heat for 30–60 seconds per side to warm through and slightly melt the cheese. Use a spatula to press gently and prevent over-browning.
Transfer sandwich to a cutting board. Using a sharp knife, cut diagonally into two halves. Serve immediately.
Pair with chips, a pickle spear, or a side salad as desired.
