Prepare and toast bread

Lightly butter one side of each sourdough slice with the unsalted butter. Heat a nonstick skillet over medium heat and toast the buttered sides until golden, about 1–2 minutes per side. Remove and place toasted sides down on your workspace.

Spread the mayonnaise on the untoasted side of one slice of bread.

Meat & Cheese

Arrange the thinly sliced roast turkey evenly over the mayonnaise-spread slice. Season the turkey lightly with 1/4 tsp kosher salt and a pinch of the black pepper.

Place the cheddar slice on top of the turkey so it will warm slightly from the bread and meat. If you prefer melted cheese, return the assembled open-faced half to the warm skillet for 30–45 seconds, covering with a lid, until cheese softens.

Top the cheese with the tomato slices and the lettuce leaf. Sprinkle the remaining black pepper (about 3/4 tsp) over the tomato and lettuce for even seasoning.

Close the sandwich with the second slice of toasted bread, buttered side out. Press down gently to compact the sandwich.

Using a sharp knife, cut the sandwich in half diagonally. Serve immediately.
