Prepare ingredients

Measure out 2 oz rye whiskey, 0.5 oz pure maple syrup, 0.75 oz fresh lemon juice, 2 dashes Angostura bitters, 1 dash orange bitters. If using egg white, separate half an egg (about 0.5 egg white) and have it ready. Prepare a large ice cube for the serving glass and chill that glass if possible.

Dry shake (if using egg white)

In a cocktail shaker add the rye, maple syrup, lemon juice, bitters and the half egg white. Seal the shaker and shake vigorously without ice for 15–20 seconds to build a silky foam.

Shake with ice

Add 1 cup of ice to the shaker (enough to fill it) and shake very hard for 15–20 seconds until the shaker is well chilled and slightly frosted. If you skipped the egg white, just combine all liquid ingredients with ice and shake until well chilled.

Strain and serve

Double strain the cocktail into a chilled rocks glass over the large ice cube (use a Hawthorne strainer and a fine mesh strainer if available) to remove ice shards and any solids. The drink should have a smooth texture with a small layer of foam when egg white is used.

Garnish

Express the oils of an orange peel over the drink by holding the peel over the glass and pinching to release the oils, then either flame briefly with a match or use candied orange peel and place it on the rim or float it on the foam. Optionally add 1–2 drops of Angostura bitters on the foam and use a toothpick to create a small decorative swirl.
