Prepare and optionally toast the bread
Preheat the oven to 350°F (175°C). Cut a horizontal lid off the round loaf about 1–1.5 inches from the top; set lid aside. Hollow out some of the soft interior from both the top and bottom halves, leaving a roughly 1-inch thick shell to reduce bulk and make room for fillings. Lightly brush the cut interior surfaces with 1 tablespoon olive oil or spread softened butter if you prefer a toasted crust. Place both halves, cut side up, on a baking sheet and warm in the oven 6–8 minutes until slightly crisped but not hard. Remove and cool slightly.

Chop and combine
In a medium bowl combine the coarsely chopped green and black olives, chopped giardiniera, chopped pepperoncini, and chopped capers. Add the minced garlic and chopped parsley; stir to combine.
Dress and marinate
Whisk together red wine vinegar, 3 tablespoons extra-virgin olive oil, dried oregano, black pepper and sugar (if using). Pour the dressing over the olive mixture and toss thoroughly so everything is coated. Taste and adjust seasoning. Cover and refrigerate at least 1 hour (preferably 2–4 hours) so flavors meld; you can make the salad 24 hours ahead for best flavor. Before assembly, drain off and reserve any excess oil/vinegar to avoid a soggy sandwich.

Arrange meats and cheeses
On the bottom half of the warmed loaf, optionally spread 2 tablespoons mayonnaise in an even layer. Begin layering the deli meats in this order for balanced flavor and structural integrity: lay the Genoa salami slices to cover the surface, then the mortadella, then the ham — slightly overlapping so there are no gaps. Press the layers gently so they compact.
Add cheeses
Top the meats with an even layer of provolone slices, then the mozzarella (or fontina) slices so the cheeses cover the meats completely. If you like a hot, melty sandwich, place the assembled bottom half (meats + cheeses) under a preheated broiler for 1–2 minutes just until cheese softens and begins to melt; watch carefully to avoid browning. Remove from oven and proceed immediately.
Assembly & Finish
Add olive salad and close
Spoon the olive salad evenly over the cheese layer, using a slotted spoon or letting excess liquid drip back into the bowl to prevent sogginess. Spread the reserved olive-oil mixture (if desired) sparingly on the inside of the top half of the loaf. Place the top half over the fillings, pressing down gently but firmly so layers compact.
Weight and rest
Wrap the assembled muffaletta tightly in plastic wrap or parchment, then place a heavy skillet or a couple of cans on top to compress it. Refrigerate for at least 1 hour to allow flavors to marry and the sandwich to hold together; 4 hours or overnight is better. If you warmed the bread earlier, you can serve sooner but chilling improves slicing.
Slice and serve
Unwrap and transfer to a cutting board. Using a sharp serrated knife, slice the muffaletta into 6–8 wedges or into halves for larger servings. Serve at room temperature or slightly chilled. Leftover muffaletta keeps well wrapped in refrigerator for up to 3 days.
