Method
For the Sandwiches
Prepare rolls
Slice each ciabatta roll horizontally. Lightly butter the cut faces with softened butter (about 1/2 tablespoon per cut face) and set aside.
Assemble meats and cheeses
On the bottom half of each roll, layer about 150 g roast beef (adjust per appetite), 75 g smoked turkey, and 50 g peppered ham. Top the meat with two slices of provolone on three sandwiches and one slice provolone + one slice cheddar on the other three, or distribute cheese per preference.
Vegetable layer
Add a small handful (about 1/3 cup) of romaine lettuce over the cheese, 2–3 tomato slices per sandwich, 2 pickle slices, and a few thin red onion rings (about 1–2 tablespoons per sandwich).

Make the sauce
In a medium bowl, whisk together 1 cup mayonnaise, 2 tablespoons Dijon mustard, 1 tablespoon whole grain mustard, 1 teaspoon olive oil, 1 teaspoon red wine vinegar, 1 teaspoon Worcestershire sauce, minced garlic, 1/2 teaspoon smoked paprika, 1/2 teaspoon hot sauce (optional), 1/2 teaspoon salt, and 1/2 teaspoon black pepper until smooth and slightly glossy.
Apply sauce
Spread about 2 tablespoons of sauce on the bottom half of each prepared roll (under the meats) and 1 tablespoon on the top half for a balanced flavor.
For Toasting & Finish
Grill or toast
Heat a large skillet or griddle over medium heat. Brush the skillet lightly with 1 teaspoon olive oil. Place assembled sandwiches (butter-side down) on the skillet. Press gently with a spatula or a sandwich press and cook 2–3 minutes until the bread is golden and cheese begins to soften. If using an oven, place sandwiches on a baking sheet and toast at 400°F (200°C) for 6–8 minutes.
Finish and serve
Remove sandwiches from heat. Add any extra sauce to the top half if desired. Cut each sandwich in half on the diagonal. Serve immediately with extra pickle slices or chips.
