Prepare loaf

Preheat oven

Preheat the oven to 375°F (190°C). Position an oven rack in the middle position.

Using a sharp serrated knife, slice the baguette crosswise into 1-inch thick slices, stopping about 1/4 inch from the bottom so the loaf stays intact (or make diagonal cuts). Alternatively, slice fully and arrange pieces close together on a baking sheet for pull-apart style.

Make garlic butter

In a small bowl, combine the softened butter and olive oil until smooth and spreadable.

Stir in the minced garlic, chopped parsley, grated Parmesan, salt, and black pepper until evenly distributed. Taste and adjust salt if needed.

Assemble bread

If you sliced the loaf but left it partially intact, gently spread the garlic butter between each slice using a small spatula or knife so there's an even amount in each gap. Also rub or spread any remaining butter over the top crust and cut edges so all pieces get flavor.

If you fully sliced the loaf into separate pieces, brush or spread butter onto each slice, then arrange the slices close together (cut side up) on a parchment-lined baking sheet or in a shallow baking dish.

Evenly sprinkle the shredded mozzarella (and shredded cheddar if using) over the top of the loaf, making sure some cheese falls between slices so it melts into the gaps.

Sprinkle the dried oregano or Italian seasoning and red pepper flakes (if using) over the cheese for extra flavor and color.

Bake & finish

Place the assembled bread into the preheated oven and bake for 12–15 minutes, until the butter is bubbling and cheese is melted.

For a golden, slightly browned top, switch the oven to broil (high) for 1–2 minutes—watch closely to prevent burning.

Remove from oven and let rest for 2–3 minutes. If you left the loaf partially intact, cut through the bottom to separate slices. Transfer to a board or platter.
