Cendol Preparation Steps
Prepare the Cendol Dough
In a saucepan, bring 1 cup of water to a boil. In a mixing bowl, combine rice flour, tapioca starch, and a pinch of salt. Gradually add the boiling water and mix until a smooth dough forms. Add the pandan leaves (previously blended with 1 cup of water) to the mixture for flavor and color.
Shape the Cendol
Using a cendol maker or a piping bag, press the dough through the holes into a pot of boiling water. Allow the cendol to cook for about 2-3 minutes until they float. Remove and rinse under cold water to stop the cooking process.
Prepare the Sweet Coconut Sauce
In a small saucepan, combine coconut milk, sugar, and a pinch of salt. Heat gently until the sugar dissolves, stirring occasionally. Do not boil.
Assemble the Cendol
In a serving bowl or glass, add a generous amount of ice shavings. Top with the cooked cendol and pour the sweet coconut sauce over it. Add additional sugar syrup or palm sugar syrup to taste, if desired.
