Prepare the Cauliflower
In a large pot, bring water to a boil. Add cauliflower florets and blanch for about 2-3 minutes. Drain and set aside to cool.
Make the Batter
In a mixing bowl, combine cornstarch, water, gochujang, soy sauce, maple syrup, and minced garlic. Whisk until smooth.
Coat the Cauliflower
Dip each cauliflower floret into the batter, making sure it's well coated.
Heat the Oil
In a large frying pan or wok, heat vegetable oil over medium-high heat until hot.
Fry the Cauliflower
Carefully add the coated cauliflower florets to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
Garnish and Serve
Sprinkle the fried cauliflower with toasted sesame seeds and sliced green onions. Serve immediately.
