1. Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for a few minutes.
2. Cook the Bacon
While the chicken is resting, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
4. Assemble the Sandwich
On one slice of toasted bread, spread 1 tablespoon of spicy mayo. Layer with lettuce, sliced grilled chicken, aged cheddar, crispy bacon, and tomato slices. Top with another slice of bread and repeat for the second sandwich.
5. Serve
Cut the sandwiches in half and serve immediately with extra spicy mayo on the side if desired.
