Method
Prep & Breading
Chill curds
Place the white cheddar cheese curds in a single layer on a small plate or tray and freeze for 20–30 minutes. Chilling firms the curds so they release less cheese when fried.
Make dry mix
In a shallow bowl or rimmed plate combine the all-purpose flour, cornstarch, 1/2 teaspoon salt, 1/4 teaspoon black pepper, garlic powder, onion powder and smoked paprika. Whisk to combine and break up any lumps.
Make egg wash
In a separate shallow bowl whisk together the eggs and milk until smooth.
In a third shallow bowl mix the panko breadcrumbs with the fine dry breadcrumbs (if using) and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir to combine.
Triple-coat curds
Working in small batches, dredge chilled curds first in the seasoned flour mixture (shake off excess), then dip into the egg wash, then press into the panko mixture to coat completely. For an extra-secure coating, return each coated curd to the egg wash briefly and then re-coat in panko for a double layer. Place breaded curds on a parchment-lined tray and keep chilled while you finish the rest.
Frying & Finishing
Heat oil
Pour oil into a medium heavy-bottomed saucepan or deep skillet to a depth of about 2 inches (roughly 2–3 cups depending on pan). Heat over medium-high until it registers 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping a tiny breadcrumb in — it should sizzle and brown within about 30–45 seconds.
Fry curds
Fry the breaded curds in small batches (4–6 pieces depending on pan size) so the oil temperature stays near 350°F. Cook 1.5–2 minutes, turning as needed, until golden brown and crisp. Do not overcook; curds heat through quickly and you don't want the cheese to burst out of the coating.
Drain
Use a slotted spoon or spider to remove curds to a paper towel-lined plate or a wire rack set over a baking sheet. Sprinkle lightly with a pinch of salt while still hot. Allow 1–2 minutes to rest — cheese will be hot and slightly melty inside.
Reheat tip (if needed)
If making ahead, keep fried curds on a wire rack in a 200°F (95°C) oven for up to 20 minutes to keep warm and crisp. Do not hold longer than this or they will soften.
