Preheat oven

Preheat the oven to 220°C (425°F). Position a rack in the middle of the oven. If using a baking sheet only, line it with parchment paper. For extra crispiness, place an inverted metal cooling rack on the baking sheet and spray lightly with oil.

Wash and dry the sweet potatoes. Trim ends. Cut each sweet potato into 1/4–1/2 inch (6–12 mm) thick sticks: first slice into 1/2-inch slabs lengthwise, then stack and cut into sticks so they are uniform in size for even cooking.

Place the cut sweet potato sticks in a large bowl and pat them dry with paper towels to remove excess surface moisture.

Sprinkle the cornstarch over the potatoes and toss gently until the pieces are lightly dusted. The cornstarch helps create a crisper exterior.

In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, ground cumin, salt, and black pepper until combined.

Pour the oil-and-spice mixture over the cornstarch-coated fries. Toss gently but thoroughly so each fry is evenly coated. If fries clump together, spread them out and toss again individually.

Bake

Arrange the seasoned fries in a single layer on the prepared baking sheet or on the oiled rack, leaving space between pieces. Overcrowding will cause steaming and soggier fries.

Bake in the preheated oven for 12 minutes. Remove the sheet and flip or shake the fries to promote even browning.

Return the fries to the oven and bake another 8–12 minutes, until edges are crisp and centers are tender. Total bake time will be about 20–24 minutes depending on thickness and oven — start checking at 18 minutes.

If you prefer extra crispness, switch the oven to broil for 1–2 minutes on high, watching closely to avoid burning.

Remove fries from the oven and immediately transfer to a serving plate. While still hot, sprinkle with chopped parsley and grated Parmesan if using. Squeeze lime wedges over the fries for a bright finish.

Serve immediately for best texture. Leftovers can be reheated in a 200°C (400°F) oven for 5–8 minutes to re-crisp.
