Prep lobster

If using whole cooked lobster or tail, remove meat from shell and roughly chop to yield about 1 cup. Pat lobster meat dry with paper towels to remove excess moisture.

Melt 1 tablespoon unsalted butter in a small skillet over medium heat until foaming but not browned.

Add the finely minced shallot and sauté 1–2 minutes until softened and translucent, stirring so it doesn't color.

Add the minced garlic and cook 20–30 seconds until fragrant.

Add the chopped lobster meat to the skillet and warm through 1–2 minutes, gently tossing with a spatula so it heats evenly but doesn't overcook.

Remove skillet from heat. Stir in 1 teaspoon lemon juice, 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1 tablespoon chopped chives until combined. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon hot sauce if using. Taste and adjust seasoning. Let the mixture cool slightly while you prepare the bread and cheese.

Assemble & Grill Sandwiches

Grate/shred the Gruyère and sharp cheddar and mix them together in a small bowl so the cheese melds evenly between sandwiches.

Lay out 4 slices of sandwich bread on a work surface. Spread softened unsalted butter evenly on one side of each slice (this will be the outside of the sandwich).

On the unbuttered side of two bread slices, distribute half of the cheese mixture (about 3/4 cup each) leaving a small border. Divide the lobster filling evenly between the two sandwiches, spreading it over the cheese layer. Sprinkle the remaining cheese on top of the lobster to help bind the filling when melted. Top each with the remaining bread slice, buttered side facing up.

Heat a heavy skillet or griddle over medium-low to medium heat. Place sandwiches in the cold pan or once the pan is warm; cook slowly to allow cheese to melt without burning the bread. Cook 3–5 minutes per side, pressing gently with a spatula or using a heavy lid/skillet to press, until bread is deep golden brown and cheese is melted—flip carefully and cook the second side another 3–5 minutes. If the bread is browning too quickly before the cheese melts, lower heat and cover pan for a minute to trap heat.

When done, transfer sandwiches to a cutting board and rest 1 minute. Slice sandwiches in half on the diagonal. Garnish with chopped chives or parsley if desired.

Serve sandwiches hot with lemon wedges and garlic aioli on the side for dipping. Squeeze a little lemon over the exposed lobster after cutting if you like a bright finish.

Optional: Plate with a small salad or kettle chips and microgreens for presentation.
