Fried Oysters
Mix dry dredge
In a shallow bowl combine all-purpose flour, cornstarch, fine cornmeal, salt, black pepper, cayenne, and garlic powder. Whisk to combine and break up any lumps.
Make wet mixture
In a separate bowl whisk together buttermilk and the large egg until smooth.
Panko setup
Place panko breadcrumbs in a third shallow bowl or plate. Set up as a three-station assembly: wet (buttermilk/egg), dry (flour mix), and panko.
Dredge oysters
Working in batches to avoid overcrowding, lightly toss each oyster in the dry flour mixture, shake off excess, dip into the buttermilk-egg, then press into panko so each oyster is evenly coated. Place coated oysters on a wire rack while you heat the oil.
Fry oysters
Fry oysters in batches (do not overcrowd) for about 90 seconds to 2 minutes per side, turning once, until golden brown and crisp. Use a slotted spoon or spider to transfer fried oysters to a paper-towel-lined baking sheet or wire rack to drain. Maintain oil temperature between 325–350°F by adjusting heat.
Finish and season
While still hot, gently season the fried oysters with a light sprinkle of salt. Keep warm in a 200°F (95°C) oven on a wire rack if frying multiple batches.
Remoulade Sauce
Combine mayonnaise, Dijon mustard, whole-grain mustard, prepared horseradish, ketchup, and hot sauce in a small bowl. Whisk until smooth.
Fold in chopped capers, minced cornichons (or dill pickle), minced shallot, and chopped parsley. Add lemon juice, smoked paprika, salt, and black pepper. Taste and adjust seasoning: add more hot sauce for heat, lemon for brightness, or a pinch more salt as needed.
Cover and refrigerate for at least 15 minutes to allow flavors to meld. Bring to near room temperature before serving if chilled for longer.
