Prepare the eggplant

Slice and sweat

Trim the stem ends of the eggplants. Cut each eggplant into 1/2-inch thick sticks (first into 1/2-inch slabs, then into 1/2-inch batons). Place the cut eggplant in a large bowl and sprinkle with 1 tsp salt. Toss to distribute the salt, then let sit for 20–30 minutes to draw out bitterness and excess moisture.

After 20–30 minutes, place the eggplant sticks in a colander and rinse briefly under cold water to remove excess salt. Pat thoroughly dry with clean kitchen towels or paper towels. If pieces still seem very wet, press gently to remove more moisture — dry eggplant helps the breading stick and prevents sogginess.

Prepare three shallow dishes: in the first put the 3 tbs flour; in the second whisk together the 2 eggs and 2 tbsp milk until smooth; in the third combine panko, grated Parmesan (if using), oregano, garlic powder, smoked paprika, 1/2 tsp salt and 1/2 tsp black pepper. Fluff the panko so it’s not clumped.

Working in batches, dredge each dry eggplant stick first in flour, shaking off excess, then dip into the egg mixture letting extra drip off, and finally press into the panko mixture to coat evenly on all sides. Place breaded fries on a wire rack set over a sheet pan; this keeps the coating crisp. Repeat until all eggplant is breaded.

Cook (fry or bake)

Pour vegetable oil into a heavy skillet or Dutch oven to a depth of about 1/2 inch (approximately 1/2–3/4 cup depending on pan). Heat over medium-high until oil reaches 350°F (175°C) or a small breadcrumb sizzles and browns in about 20–30 seconds. Fry the breaded eggplant in batches without overcrowding, turning once, until golden brown and crisp, 2–3 minutes per side. Use a slotted spoon or tongs to transfer fries to a paper-towel-lined tray to drain. Keep warm in a low oven (200°F/90°C) if desired while you finish remaining batches.

Baking (lighter option)

Preheat the oven to 425°F (220°C). Lightly brush or spray the breaded eggplant pieces with olive oil (or spray the baking sheet). Arrange in a single layer on a parchment-lined or lightly oiled sheet pan. Bake for 15–20 minutes, flipping once halfway through, until golden and crisp at the edges. For extra crispness, broil 1–2 minutes at the end while watching closely.

Finish and serve

Season the fries with a light sprinkle of salt immediately after cooking. Transfer to a serving platter and garnish with chopped parsley and lemon wedges if using. Serve hot with marinara sauce, aioli, or your preferred dip.

Leftovers can be stored in the refrigerator in an airtight container for up to 2 days; re-crisp in a 400°F (200°C) oven for 8–10 minutes before serving.
