Prep fillets

Rinse the bluegill fillets under cold water and pat dry thoroughly with paper towels. Trim any remaining skin or bones and, if fillets are thick, slice them into 2-3 pieces for even cooking.

Place fillets in a shallow dish. Drizzle with the lemon juice and season evenly with kosher salt, black pepper, and garlic powder. Turn fillets so the seasoning coats both sides. Let sit at room temperature for 10–15 minutes while you prepare the breading station.

Set up dredging stations

Arrange three shallow dishes: one with the flour, one with the beaten egg mixed with milk, and one with the panko breadcrumb mixture.

In the panko dish combine panko breadcrumbs, grated Parmesan (if using), paprika, and onion powder. Stir to distribute evenly.

Bread the fillets

Working one at a time, dredge each seasoned fillet first in flour, shaking off excess, then dip into the egg mixture, letting extra drip off, and finally press into the panko mixture to coat thoroughly. Place breaded fillets on a wire rack set over a sheet pan to rest for 5–10 minutes—this helps the breading adhere.

Heat the oil

Pour the oil into a large skillet so it comes about 1/4 inch up the side (about 1 cup). Heat over medium-high heat until shimmering and a small piece of panko sizzles and browns in about 30 seconds (oil temperature ~350°F/175°C). Adjust heat to maintain a steady sizzle but not smoking.

Pan-fry the fillets

Carefully add breaded fillets to the hot oil in a single layer without crowding (work in batches if needed). Fry 2–3 minutes per side, depending on thickness, until golden brown and the fish flakes easily with a fork. Use tongs or a slotted spatula to turn gently so breading stays intact.

When fillets are done, transfer them to a paper-towel-lined plate or a wire rack. If desired, immediately spoon the butter over hot fillets to add gloss and flavor, or sprinkle with chopped parsley and a squeeze of lemon.

Serve

Serve hot with lemon wedges and tartar sauce or remoulade on the side.
