Start by washing and slicing the fresh peaches. Remove the pit and chop them into small pieces.

In a skillet over medium heat, add the chopped peaches and sprinkle with granulated sugar. Cook for about 5-7 minutes until the peaches are softened and the sugar has melted, creating a brulee effect. Remove from heat and let cool slightly.

In a cocktail shaker, add the caramelized peach mixture, reserve bourbon, fresh lemon juice, and simple syrup. Add ice cubes to the shaker.
