Preparing the Salmon

Season the Salmon

Rub the salmon fillets with olive oil, salt, black pepper, and lemon juice. Allow the salmon to marinate for 15-20 minutes.

Grill the Salmon

Preheat the grill to medium-high heat. Grill the salmon fillets for about 5-7 minutes on each side or until cooked through and flaky. Remove from the grill and set aside.

Making Fried Calamari

Prepare the Breading

In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Fry the Calamari

Heat vegetable oil in a deep skillet over medium-high heat. Dredge calamari rings in the flour mixture and fry in batches for 2-3 minutes or until golden brown. Remove and drain on paper towels.

In a large bowl, combine arugula, halved cherry tomatoes, and capers. Toss gently to mix.

Making Dill Lemon Sauce

Combine Sauce Ingredients

In a small bowl, mix together dill, mayonnaise, lemon juice, and minced garlic until smooth. Adjust seasoning to taste.

Plating the Dish

Serve the Dish

On a plate, place a bed of fried calamari, top with the mixed arugula salad, and place the grilled salmon on top. Drizzle with dill lemon sauce before serving.
