In a saucepan, combine soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and water. Cook over medium heat until the mixture thickens, stirring frequently.

In each lettuce leaf, layer shredded chicken, drizzle with the sweet soy ginger glaze, and top with crushed crispy wontons, chopped peanuts, and a dollop of spicy aioli. Serve immediately.
