Preheat your oven to 400°F (200°C). Spread the corn on a baking sheet and roast for 20-25 minutes, until lightly charred. Remove from oven and set aside to cool.
In a large mixing bowl, mash the ripe avocados with a fork until smooth. Add the roasted corn, fresh lime juice, chopped cilantro, diced cherry tomatoes, and minced serrano pepper. Mix gently to combine.
Fold in the crumbled feta cheese and season with salt and pepper to taste.
Serve the guacamole with warm tortilla chips for dipping.
