Salmon & Herb Crush

Prepare herb crust

In a medium bowl combine chopped parsley, chives, dill, minced garlic, lemon zest, panko breadcrumbs, olive oil, salt and black pepper. Mix until ingredients are evenly moistened; set aside.

Preheat and season

Preheat oven to 425°F (220°C). Pat salmon fillets dry with paper towel. Season skin and flesh lightly with a pinch of salt and pepper.

Sear and finish in oven

Heat a large ovenproof skillet over medium-high heat. Add 1 tbs olive oil. Place salmon fillets skin-side down and sear 2–3 minutes until skin is crisp. Flip fillets, press herb crust onto the flesh side in an even layer, then transfer skillet to the oven and roast 6–8 minutes (depending on thickness) until salmon reaches desired doneness (internal ~125–130°F for medium-rare to 140°F for medium). Remove from oven and rest 3 minutes.

Truffle Beurre Blanc

Reduce aromatics

In a small saucepan over medium heat, combine minced shallot, dry white wine and white wine vinegar. Bring to a simmer and reduce until about 2–3 tablespoons of liquid remain (about 6–8 minutes).

Mount with butter

Lower heat to very low. Add the heavy cream and swirl. Gradually whisk in cold cubed butter, a few pieces at a time, incorporating completely before adding more to create a smooth emulsified sauce. Keep the pan just warm — do not boil or the sauce will break.

Finish sauce

When sauce is glossy and slightly thickened, remove from heat. Whisk in truffle oil, lemon juice, salt and white pepper. Taste and adjust seasoning. Keep warm (over a bowl of warm water or low heat) until plating.

Preserved Tomatoes

Quick preserve

Preheat oven to 300°F (150°C). Toss halved cherry tomatoes with olive oil, sliced garlic, red pepper flakes, thyme, salt and lemon zest on a rimmed baking sheet. Roast for 25–30 minutes until tomatoes are softened, slightly blistered but still holding shape. Remove and let cool slightly — juices will concentrate and create a syrupy glaze. These can be made ahead and served at room temperature.

Creamy Mashed Potatoes

Cook potatoes

Place cubed potatoes in a large pot and cover with cold salted water. Bring to a boil, then simmer until potatoes are fork-tender, about 15–18 minutes. Drain well.

Mash and finish

Return potatoes to warm pot off heat to evaporate excess moisture for 1 minute. Add butter, warm heavy cream, and cream cheese (if using). Mash with a potato masher or ricer until smooth and creamy. Season with salt and black pepper to taste. Keep warm.

Snap Peas

Quick sauté

Bring a medium skillet to medium-high heat. Add 1 tbs butter. When melted, add trimmed snap peas and sauté 2–3 minutes until bright green and tender-crisp. Finish with lemon juice, salt and pepper. Remove from heat and keep warm.

Finishing & Plating

Spoon a generous portion of creamy mashed potatoes onto each warmed plate. Arrange 3–4 snap peas beside the potatoes. Place a rested herb-crusted salmon fillet on top or slightly against the potatoes, flesh-side up showing the crust. Spoon warm truffle beurre blanc around and slightly over the salmon (about 2 tbs per plate). Scatter preserved tomatoes alongside and spoon some of their concentrated juices over the fish and potatoes for brightness.

Garnish each plate with a small handful of microgreens or baby arugula tossed lightly with 1 tsp extra virgin olive oil and a light pinch of salt. Serve immediately with a lemon wedge on the side.
