Marinated Chicken Wings
Prepare and brine
Pat the wings dry with paper towels. Place wings in a large bowl or zip-top bag.
Pour the marinade over the wings, toss to coat thoroughly. Refrigerate and marinate for at least 45 minutes and up to 4 hours for best flavor. Remove wings from fridge 20 minutes before cooking to take the chill off.
Coating & Cooking
Make the dry coating
In a shallow bowl or rimmed plate combine 1/2 cup all-purpose flour, 1/4 cup cornstarch, 1/2 teaspoon baking powder and 1 teaspoon kosher salt. Whisk to distribute and break up any lumps.
Remove wings from the marinade, letting excess marinade drip back into the bowl (do not discard marinade). Lightly dredge each wing in the flour/cornstarch mixture, shaking off excess. Place coated wings on a wire rack set over a sheet tray while you heat oil.
Pour about 1 cup neutral oil into a large heavy skillet (cast-iron or heavy stainless) or a deep fryer. Heat oil over medium-high heat to 340–350°F (170–175°C). If you don’t have a thermometer, test by dropping a small pinch of coating — it should sizzle steadily but not burn.
Working in batches (do not overcrowd), carefully place wings in the hot oil. Fry for about 6–8 minutes per batch, turning once halfway through, until exterior is golden and internal temperature reaches 165°F (74°C). Adjust heat as necessary to maintain 340–350°F. Transfer cooked wings to a wire rack or paper towel-lined tray.
After all wings are fried, optionally increase heat slightly and briefly crisp wings 30–60 seconds more in the skillet for extra crunch. Drain and keep warm.
Hibachi Glaze & Finish
Prepare glaze
In a small saucepan or skillet over medium heat, combine the reserved marinade (if you prefer to use it, bring to a rolling boil for 1–2 minutes to cook off alcohol and bacteria) or combine 2 tablespoons soy sauce, 1.5 tablespoons honey, 1 tablespoon rice vinegar, 1 tablespoon brown sugar and 1 teaspoon minced garlic. Stir and cook until sugar dissolves and mixture thickens slightly, about 2–3 minutes. Reduce heat to low and whisk in 2 tablespoons butter until melted and glossy.
Taste the glaze and adjust seasoning: add a pinch of salt or another 1/2 tablespoon honey if you want it sweeter, or a splash more soy for saltiness.
Toss the fried wings in the warm glaze: place wings in a large bowl, pour glaze over them, and toss gently to coat evenly. Work quickly so glaze clings but doesn’t pool. Alternatively, brush glaze onto wings on a platter for a more controlled finish.
Transfer glazed wings to a serving platter. Sprinkle sliced green onions and toasted sesame seeds over the top. Serve immediately, full serving with no dip.
