Roasting the Broccoli

Preheat the oven to 200°C (400°F). Toss the broccoli florets with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes, or until tender and slightly charred.

Preparing the Rice Noodles

Cook the rice noodles according to package instructions. Drain and set aside.

Making the Curry

In a large pan, heat vegetable oil over medium heat. Add minced garlic and ginger, sautéing until fragrant. Stir in the Malaysian curry paste and cook for 1-2 minutes. Pour in coconut milk, fish sauce, brown sugar, and lime juice. Simmer for 5 minutes.

Cooking the Prawns

Add the prawns to the curry sauce and cook for 3-4 minutes, or until prawns are fully cooked. Stir in chopped cilantro just before serving.

Serving

To serve, place a portion of rice noodles in a bowl, ladle the prawn curry over the top, and add roasted broccoli on the side.
