1. Prepare the Preserved Tomatoes

Preheat the oven to 300°F (150°C). Toss the cherry tomatoes with olive oil, salt, and balsamic vinegar. Spread them on a baking sheet and roast for 1 hour until soft and slightly caramelized.

2. Make the Beurre Blanc

In a saucepan, combine shallots and white wine. Simmer until reduced by half. Add the heavy cream and reduce further. Gradually whisk in the butter, and finally add truffle oil. Keep warm.

3. Prepare the Mashed Potatoes

Boil the potatoes in salted water until fork-tender. Drain and return to pot. Add butter and heavy cream, then mash until smooth. Season with salt and pepper.

In a skillet, heat olive oil over medium heat. Add snap peas and asparagus, season with salt and pepper, and sauté for 3-5 minutes until tender.
