Cocktail

Lemon-lime slush (makes ~1 cup)

Method

Lemon-lime slush (prepare first)

Combine juices and syrup

In a measuring cup or small bowl combine fresh lemon juice, fresh lime juice, simple syrup and cold water. Stir to combine.

Blend to slush

Place the juice mixture and 1 cup of ice cubes into a blender. Pulse on high in 1–2 second bursts until mixture reaches a smooth, spoonable slush consistency (about 10–15 seconds). If too thin, add a few more ice cubes and pulse; if too thick, add a splash of cold water and pulse briefly.

Chill

Spoon the slush into a small covered container and chill in the freezer for 5–10 minutes while you prepare the glass so it firms slightly but remains scoopable.

Assemble Supersonic Gin+Tonic

Prep glass and garnish

Select a highball glass. Add 1 cup of fresh ice to the glass. Thread three cucumber ribbons loosely and slide them along the inside of the glass so they show through the sides. Place a thin lime wheel on top of the ice near the rim.

Aromatize rosemary

Lightly slap the rosemary sprig between your palms to release oils, then gently sweep it over the glass rim and the ice to impart aroma. Optionally, for a smoky note, briefly singe the tip of the rosemary sprig with a kitchen torch until it smolders, then quickly wave it once over the glass and drop the sprig into the drink.

Add gin and citrus

Measure and pour 2 oz gin and 0.5 oz fresh lime juice into the prepared glass over the ice and cucumber ribbons.

Add lemon-lime slush

Spoon in 1 oz of the lemon-lime slush into the glass on top of the gin. The slush will begin to mingle with the gin and lime juice, creating a slightly frosted texture.

Top with tonic

Slowly pour 4 oz Fever-Tree Indian Tonic Water down the inside of the glass over the back of a bar spoon to preserve effervescence and create a layered look. Give the drink one gentle stir (1–2 revolutions) to marry components while keeping most bubbles intact.

Finish and serve

Garnish by tucking the extra cucumber ribbon and rosemary sprig into the drink if desired. Serve immediately with a straw or stirring stick. Encourage the drinker to stir briefly before the first sip to incorporate the slush fully.
