Preparation
Prepare the Tofu
Press the firm tofu to remove excess moisture and then cut it into small cubes.
Make the Sweet Soy Ginger Glaze
In a small saucepan over medium heat, combine soy sauce, brown sugar, grated ginger, rice vinegar, and sesame oil. Bring to a simmer and cook for about 5 minutes until slightly thickened. Remove from heat.
Fry the Wontons
Heat oil in a pan over medium heat. Cut wonton wrappers into triangles and fry until golden and crispy. Drain on paper towels.
Cook the Tofu
In the same pan, add a little more oil if needed and sauté the cubed tofu until golden brown on all sides. Pour the sweet soy ginger glaze over the tofu and cook for an additional 2 minutes, stirring to coat the tofu.
Prepare the Spicy Aioli
In a small bowl, mix mayonnaise, Sriracha, lime juice, and minced garlic until well combined.
Assembly
Assemble the Wraps
Take a lettuce leaf and spoon a portion of the glazed tofu into the center. Top with crispy wontons, chopped peanuts, and drizzle with spicy aioli. Wrap and enjoy!
