Cocktail Preparation
1. Prepare the Glass
Rim a chilled cocktail glass with salt by running a lime wedge around the rim and dipping it into salt. Set aside.
2. Muddle Strawberries
In a cocktail shaker, muddle the fresh strawberries until they are well crushed.
3. Combine Ingredients
Add the tequila, fresh lime juice, passionfruit puree, simple syrup, and egg white to the shaker with the muddled strawberries.
4. Dry Shake
Shake the mixture vigorously without ice for about 15 seconds to emulsify the egg white.
5. Shake with Ice
Add ice to the shaker and shake again for another 15-20 seconds to chill the mixture.
6. Strain and Serve
Double strain the mixture into the prepared cocktail glass to remove any solids.
7. Garnish
Garnish with a fresh strawberry or a lime wheel on the rim of the glass and serve immediately.
