Method
Cooking the Broccoli
Roast the Broccoli
Preheat the oven to 200°C (400°F). Toss the broccoli florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and slightly charred.
Preparing the Noodles
Cook the Rice Noodles
Prepare the rice noodles according to package instructions. Drain and set aside.
Cooking the Prawns and Sauce
Sear the Prawns
In a large skillet, heat olive oil over medium-high heat. Add garlic and ginger, sauté for 1 minute. Add the prawns and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
Prepare the Curry Sauce
In the same skillet, add coconut milk, red curry paste, peanut butter, soy sauce, and lime juice. Stir well and bring to a gentle simmer. Add the prawns back to the skillet and cook for an additional 2-3 minutes.
Serving
Combine and Serve
In serving bowls, place a portion of rice noodles, top with the prawn curry, and add a serving of roasted broccoli. Enjoy!
