Preparation
Prepare the Cod
Preheat the oven to 400°F (200°C). Place the wild cod fillets on a baking sheet lined with parchment paper. Season with salt and drizzle with olive oil.
Roast the Vegetables
On the same baking sheet, toss cauliflower florets and snap peas with olive oil, salt, and pepper. Spread them out around the cod fillets.
Bake
Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the vegetables are tender.
Thai Peanut Curry Sauce
Make the Sauce
In a medium saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and chili flakes. Stir over medium heat until well combined and smooth. Adjust seasoning with salt as needed.
Assembly
Serve
On each plate, place a serving of steamed rice, top with roasted wild cod, vegetables, and drizzle with the Thai peanut curry sauce. Garnish with sliced almonds.
