Prepare the Pastry

In a large bowl, combine all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Divide the dough into four equal parts, shape into disks, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Filling

In a large bowl, toss the sliced apples with granulated sugar, cinnamon, lemon juice, and chopped toasted almonds. Set aside.

Assemble and Bake

Preheat the oven to 375°F (190°C). Roll out each disk of pastry on a floured surface to fit individual pie dishes. Place the pastry into the dishes, fill with apple mixture, and cover with another rolled-out pastry disk. Seal the edges and cut a few slits on top for steam to escape. Brush the tops with beaten egg. Bake for 25-30 minutes or until golden brown.

Let the pies cool slightly before serving. Add a scoop of Canadian maple ice cream on top of each individual pie.
