Carefully hand-pick ripe Chardonnay and Pinot Noir grapes from the vineyards in Trentino.

Harvesting

Gently press the grapes to extract the juice, ensuring minimal contact with the skins to maintain a light color.

Pressing

Transfer the juice to fermentation tanks. Add yeast to the juice and allow it to ferment at controlled temperatures for about 20-30 days.

Fermentation

Add sugar and yeast to the base wine and bottle it for a second fermentation. This creates the characteristic bubbles.

Secondary Fermentation

Age the bottles horizontally for a minimum of 18 months to develop complex flavors and aromas.

Aging

Gradually tilt and rotate the bottles to collect sediment in the neck. Freeze the neck and remove sediment before sealing with a cork.

Riddling and Disgorgement

Label the bottles and package them for distribution, ensuring each bottle reflects the quality and tradition of Ferrari Brut.
