Finely chop the sweet red bell pepper and mix with mayonnaise and lemon juice to create the relish. Set aside.
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
Slice the red onion into rings and soak them in cold water for about 10 minutes. Drain and pat dry.
Brush the Ahi tuna steaks with olive oil, season with salt and black pepper. Grill on high heat for about 1-2 minutes on each side for rare.
In the same skillet used for bacon, add a little oil and fry the onion rings until golden brown. Drain on paper towels.
Toast the burger buns lightly. Layer the bottom bun with the grilled Ahi tuna, top it with bacon, sweet pepper relish, and onion rings. Finish with the top bun.
