Cook the Brown Rice
In a pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes until the rice is tender and water is absorbed. Let it cool.
Sauté the Mushrooms
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushrooms and sauté until they are soft and any moisture has evaporated, about 5-7 minutes. Set aside to cool.
Mix the Burger Mixture
In a large bowl, combine the cooled brown rice, sautéed mushrooms, chopped almonds, miso paste, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
Form the Patties
With your hands, form the mixture into patties of your desired size. You should be able to make about 4-6 patties.
Cook the Patties
In the same skillet, add the remaining tablespoon of olive oil. Heat over medium heat and cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
Serve
Serve the veggie burgers on a plate topped with a handful of fresh arugula. Enjoy your house-made veggie burger!
