Method

Prepare the Cauliflower

Roast the Cauliflower

Preheat the oven to 425°F (220°C). Toss cauliflower florets with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown and tender.

Make the Chipotle Mayo

Mix Ingredients

In a bowl, combine mayonnaise, chipotle peppers, and lime juice. Mix until smooth and well combined.

Prepare Cilantro Chimichurri

Blend the Chimichurri

In a food processor, combine cilantro, garlic, red wine vinegar, olive oil, and salt. Blend until well combined but still slightly chunky.

Make Corn Guacamole

Mash Avocados

In a bowl, mash avocados. Stir in corn, lime juice, salt, and diced tomatoes until combined.

Assemble Tacos

Build Your Tacos

Warm the corn tortillas on a skillet. Fill each tortilla with roasted cauliflower, a dollop of chipotle mayo, a spoonful of corn guacamole, a drizzle of chimichurri, and top with Valentina hot sauce.
