Keep the caviar chilled until the last moment. Place 2 cups of ice in a small bowl, add 1 cup cold water to create an ice bath and set a smaller serving bowl inside the ice bath. Transfer the 1 oz tin of royal osetra caviar into the chilled serving bowl just before plating. Do not let the caviar sit at room temperature for more than a few minutes.

Open the caviar gently with a spoon or knife; spoon portions into a mother-of-pearl spoon or small metal spoon for service to avoid metallic taste. Reserve covered on the ice until plating.

Gaufrette chips

Using a mandoline equipped with a gaufrette or waffle-cut blade, wash and peel the potato. Hold the potato at a slight angle and pass it over the blade to produce thin, lacy waffle/gaufrette slices about 1–1.5 mm thick. If you don't have a specialized blade, use the thinnest plain blade and create a cross-hatch by rotating the potato 90° between two passes.

Immediately place the sliced potato in a bowl of cold water and agitate to remove surface starch. Drain and repeat until the water runs clear (2–3 rinses). Pat the slices very dry on clean kitchen towels or paper towels—excess moisture will cause oil spatter.

In a heavy skillet or small pot, heat 2 cups neutral oil to 350°F (175°C). If you don't have a thermometer, heat until a single potato scrap sizzles and browns in about 30–45 seconds. Fry the gaufrette slices in small batches (do not overcrowd) for 45–90 seconds, turning as needed, until crisp and golden brown.

Use a slotted spoon to transfer chips to a paper-towel-lined tray. While still warm, sprinkle with 1 tsp salt and 1 tsp sugar (optional) to enhance color and flavor. Let cool slightly; chips will crisp up as they rest. Keep warm in a low oven (200°F/95°C) for up to 10–15 minutes if needed.

Accompaniments

Finely mince the small shallot (about 1 tbs minced). Finely chop the chives to yield about 1 tablespoon.

In a small bowl, combine 4 tbs sour cream, minced shallot (reserve a pinch for garnish if desired), 1 tsp lemon zest, 1/2 tsp lemon juice, and 1/4 tsp cracked black pepper. Stir gently to combine and taste; adjust lemon or salt lightly as needed. Chill briefly if prepared ahead.

Service & plating

Place the chilled caviar bowl on the prepared ice bath at the center of the serving plate or tray. Arrange 6 gaufrette chips and the blini/toast points around the caviar, spacing them for easy access.

Spoon small quenelles or dollops (about 1/2 tbs each) of the sour cream mixture onto the blini/toast points or onto the plate for guests to combine with caviar. Finish with a scattering of chopped chives and a few very fine slivers of shallot on top of the sour cream if desired.

Serve immediately: advise guests to place a small smear of sour cream on a chip or blini, top with a small spoonful of caviar (keep portions about 1/4 tsp per bite to preserve flavor) and finish with a tiny amount of chive. Garnish plate with parsley sprigs for presentation.
