Prepare mushrooms

Preheat the oven to 375°F (190°C). Clean mushrooms by wiping caps with a damp cloth or paper towel; avoid rinsing under water. Remove stems by gently twisting and pulling; reserve stems for the filling. Place mushroom caps stem-side up on a baking sheet lined with parchment or a lightly oiled shallow baking dish.

Brush the outside and inside of each mushroom cap lightly with 1 tablespoon olive oil, then season the inside with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Set aside while preparing the filling.

Filling

Cook spinach

Heat a large skillet over medium heat. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter. When the butter melts and foams, add the reserved chopped mushroom stems (finely chopped) and 1/2 of the diced onion. Cook 3–4 minutes until softened.

Add the washed spinach in batches, stirring until wilted. Cook until all spinach is wilted and most liquid has evaporated, about 3–5 minutes total. Remove pan from heat and transfer spinach mixture to a fine-mesh sieve or bowl; press or squeeze to remove excess moisture. Let cool slightly.

Sauté garlic & combine

Return the skillet to medium-low heat. Add remaining 1/2 of the diced onion and the minced garlic; sauté 1–2 minutes until fragrant and translucent but not browned. Add the squeezed spinach and chopped mushroom stems back to the skillet just to warm for 30 seconds, then remove from heat.

In a medium bowl, combine the slightly cooled spinach mixture with 4 oz softened cream cheese, 1/2 cup grated Parmesan, 1/2 cup shredded mozzarella, 1/4 cup breadcrumbs, 1 teaspoon lemon zest, 1/8 teaspoon grated nutmeg (optional), 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix thoroughly until evenly combined. Taste and adjust seasoning if needed.

If the filling is very wet, add up to 1–2 tablespoons additional breadcrumbs to reach a scoopable, slightly firm consistency.

Assembling & Baking

Stuff mushrooms

Using a small spoon or a piping bag, mound the spinach-cheese filling into each prepared mushroom cap, pressing lightly so the filling stays in place. Fill each cap generously but avoid overpacking; top with a small sprinkle of extra Parmesan (about 1/8 teaspoon per mushroom).

Arrange the stuffed mushrooms in a single layer on the prepared baking sheet or dish. Drizzle about 1 teaspoon olive oil evenly over the filled caps and (optional) sprinkle red pepper flakes across the batch for a touch of heat.

Bake

Bake in the preheated 375°F (190°C) oven for 18–22 minutes, until the filling is set, the tops are lightly golden and the mushroom caps are tender. If you prefer a browned top, switch the oven to broil for the last 1–2 minutes, watching carefully to avoid burning.

Finish & serve

Remove mushrooms from the oven and let rest 3–5 minutes. Sprinkle with 2 tablespoons extra grated Parmesan and 1 tablespoon chopped parsley. Serve warm as an appetizer. Makes 16 stuffed mushrooms (about 4–6 appetizers per person depending on serving size).
