Soft Shell Crabs
Prepare crabs
Rinse each soft shell crab under cold water and pat dry thoroughly with paper towels. Remove the face, mouthparts and gills if not already done by your fishmonger: lift the top shell, pull off the triangular apron on the underside, then remove gill feathery bits. Keep crabs whole. Lightly score the belly shell to help them stay flat while frying.
Set up dredging station
In one shallow bowl combine the all-purpose flour, cornstarch, kosher salt, black pepper and paprika. In a second bowl whisk the eggs and milk until combined. Pat each crab again to remove excess moisture before dredging.
Dredge crabs
Working one at a time, press each crab into the flour mixture to coat both sides, then dip into the egg wash, letting excess drip off, and return to the flour mixture for a final light coat. Shake off excess flour and set the crabs on a rack while you heat the oil.
Heat oil
In a large skillet or shallow sauté pan, add vegetable oil and heat over medium-high until shimmering and a small drop of batter sizzles (about 350°F / 175°C). There should be enough oil to shallow-fry and come about halfway up the sides of the crab.
Fry crabs
Carefully place crabs in the hot oil, belly side down first. Fry 2–3 minutes per side until golden brown and crisp. Flip gently with tongs or a spatula to avoid tearing. Work in batches if needed to avoid overcrowding and oil temperature drop.
Drain
Transfer fried crabs to a wire rack set over a baking sheet or paper towels to drain and stay crisp. Season lightly with a pinch of kosher salt while still hot.

Make garlic butter
In a small saucepan or skillet over low heat, melt the unsalted butter slowly so it does not brown. Add the minced garlic and cook gently for 45–60 seconds until fragrant but not colored. Add lemon zest, lemon juice, salt, black pepper and optional red pepper flakes. Stir and remove from heat. Stir in the chopped parsley.
